Chain catering (systemised gastronomy) is a special type of operation within the hospitality sector that distinguishes itself from individual, owner-run establishments through standardised organisational structures and processes. The focus is on the efficiency and uniformity of operational procedures, with the aim of offering a consistent product range of consistent quality. Key features are defined business concepts, central control and the standardisation and multiplication of procedures.

Structure and organisation

All key processes are coordinated by a head office and implemented uniformly across the branches. The branches follow standardised procedures set out in extensive manuals covering the following areas:

The appearance and fit-out of the branches as well as the quality of the food and drink are also standardised. Classification criteria

Whether a company is classified as chain catering is based on an analysis of concepts for replication, market development and a sophisticated corporate design. Criteria assessed include the ability to be multiplied, existing standards, central purchasing and marketing control as well as uniform fit-out and customer-service standards.

Market and revenue trends

The market comprises segments such as quick service, full service, leisure catering, location-specific catering and event catering. In 2021, revenue in Germany was around 21 billion euros (36% of the catering market); in 2023 it rose to around 31 billion euros, accounting for 37% of the entire out-of-home catering sector. As early as 2011, 2,900 businesses with 150,000 employees belonged to a corresponding association; the 100 largest companies generated over 11 billion euros in revenue at the time, with growth of 5.1%. Among the highest-revenue companies are McDonald's and Burger King.
