egora Catering-Lexikon

Hummus is a versatile paste made from chickpeas and a cornerstone of Mediterranean and Middle Eastern cuisine, prized for its rich variety. In Middle Eastern cuisine, hummus is regarded as a popular mezze and is often served with other mezze. There is much debate about its origins, with some pointing to ancient Syrian recipes.

Basic recipe and preparation

The basic recipe consists of chickpeas, tahini, cumin, lemon juice and salt. A classic recipe includes:

  • 2 tins of chickpeas
  • Tahini and garlic
  • Lemon juice and olive oil
  • Cumin and salt

All ingredients are blended into a smooth paste in a food processor. Adding vegetable or herb purées such as roasted pepper, pumpkin or beetroot easily creates new variations. Hummus keeps in the fridge for up to a week and can be frozen for up to six months.

Popular hummus varieties

The variety of types is almost endless:

  • Kalamata Olive Hummus: refined with black Kalamata olives
  • Beetroot Hummus: intense colour and earthy flavour from beetroot
  • Kale Almond Hummus: with dried kale and almonds
  • Sun Dried Tomato Basil Hummus: sun-ripened tomatoes and basil
  • Carrot Ginger Hummus: roasted carrots and ginger
  • Lemon Mint Hummus: a fresh note of lemon and mint
  • Artichoke Spinach Hummus: artichoke and spinach
  • Roasted Eggplant Hummus: with roasted aubergines
  • Smoked Red Pepper Hummus: with roasted pepper
  • Thai Spice Hummus: an exotic note from Thai spices
  • White Bean Rosemary Hummus: white beans and fresh rosemary
  • Balsamico Onion Hummus: balsamic vinegar and sweet onions

Serving and combining

Hummus works well as a dip with fresh vegetables or olives, and as a spread for bread and wraps. Toppings such as olive oil, paprika powder and mint add extra flavour. Suitable side dishes include pita chips (plain, with salt, pepper or rosemary) and roasted chickpeas with various spices. It is recommended to combine it with falafel, tahini, salads, soups and vegetable sticks for dipping.
