The original home of the macaron is France, from where it has spread all over the world. Their bright colours make the various varieties easy to tell apart. Popular varieties include:

Step-by-Step Preparation

Precise weighing of the ingredients is decisive for success. The egg white is beaten until stiff before the sugar is added; the almond and icing-sugar mixture is then carefully folded in. After piping onto the tray, "tapping" the tray removes air bubbles and prevents cracks. The optimal baking temperature is 150 degrees, which is reduced to 145 degrees during baking. The characteristic "feet" that form during baking indicate a high-quality meringue mixture.

The Resting Time

A resting time of about 30 minutes before baking is important so that the macarons develop a dry surface that prevents cracks. During this time they should not be left in a draught, in order to avoid breakage. If no "feet" form, this can indicate incorrect mixing or temperature problems.

Fillings and Shelf Life

Classic fillings are ganache, buttercream and fruit jellies. A ganache made from white chocolate and cream gives a particularly creamy consistency, buttercream a soft texture, and fruit jellies a fruity note. Peanut butter is also a popular filling. Filled macarons keep for about 5-7 days, while unfilled ones stay fresh in an airtight container for up to two weeks; the filling affects the shelf life.
